Best Cookies Ive Made in 20 Years...

So my husband and I just celebrated our 20th Anniversary!  Holy crap that's a long time!?!?  We didn't do anything real magnificent in the eyes of the world, but we did go out and we did have a great time as a couple.  Our life hasn't been a big fairy tale.  In fact I am pretty sure there was a few train wrecks in there along the way.  But the truth is....I couldn't think of being with another person on this earth.  He is my prince.  MY prince.

So the other night I made cookies.  Not uncommon.  In fact to save money I try to make snacks rather than buy them.  But Ronnie said these were the best I've ever made.  20 years is a lot of cookies...

So I thought Id share the recipe and pray like heck I can recreate it.  



Awesome, Best Ever, Chocolate Chip Cookies

2 cups All-Purpose Flour
1 sm package Jello brand Vanilla Instant Pudding (do not use generic)
1 tsp Baking Soda
1 cup Shortening
3/4 cup Sugar
3/4 cup Brown Sugar
1 tsp Vanilla Extract
2 lg Eggs
2 cups Milk Chocolate Chips

Mix half the flour and pudding with electric mixer.  Add the baking soda then the shortening.  Then add both sugars while the mixer is still going and the rest of the flour.  Then the eggs and 1 1/2 cup of the chips.  Mix well.  The dough should be stiff enough to roll in your hands but not dry.  Roll into quarter size balls.  Place on greased cookie sheet.  With the remainder of the chips, place a couple in each cookie before it is baked...just to ensure each one has some definite chocolate.  Bake, 350 degrees for about 11 minutes.  Remove from pan and cool on waxed paper.

I told you the exact order I did it.  My recipe simply says to mix it all together and usually thats what I do.  However, this time I doubled the recipe and nearly forgot to double the flour.  Remembered after I had already put the rest of the stuff in....hey- it worked!!!!  So I dont think Ill change it.

Happy belated anniversary! Wes and I celebrated our 20th this year, too. Seems like forever, and yet such a short time in some ways, doesn't it? Can't wait to try this cookie recipe. I'm baking up the pumpkin-apple cider cake recipe you shared as I type, with some modifications based on your review. We'll see how it comes out! :-)
